The build is pure Ole Hickory: heavy-duty 12-gauge welded steel inside, a 22-gauge stainless exterior, and mineral-wool insulation rated to 1,200 degrees. A 65,000 BTU burner with electronic ignition runs on propane or natural gas, and a 1/4 HP convection motor with a 10-inch fan keeps heat and smoke even across every rack, with a thermostat range of 100 to 325 degrees and an upper-limit safety switch. It is built and backed by Ole Hickory Pits in Missouri.
