A 65,000 BTU burner with electronic ignition runs on propane or natural gas, and a 1/4 HP convection motor with a 10-inch fan circulates heat and smoke for even cooking across all 15 racks at 12″ x 30″. The thermostat spans 100 to 325 degrees with an upper-limit safety switch, and the unit carries the same ETL gas, electric, and sanitation approvals as its larger siblings.
